Never in the dark when it comes to sustainable and environmental initiatives, The Fairmont Waterfront is welcoming guests and diners for a night on the town to support the World Wildlife Fund (WWF). On March 26th from 8:30 pm to 9:30 pm it’s literally a lights out affair in celebration of Earth Hour, a global initiative supporting action on climate change.
To kick things off and unplug for the candlelit evening, The Fairmont Waterfront’s Herons West Coast Kitchen + Bar serves up tantalizing plates from its newly released menu for the Green and Glow event. Executive Chef, Patrick Dore and his culinary brigade have created dishes that speak to Vancouver and the surrounding region’s bounty of local seafood, produce and wines. New menu selections include such offerings as:
Cornmeal Oyster Sliders
Grilled Chanterelle Mushroom Flatbread
Cedar Plank Pecorino Cheese with Roof Top Honey
B.C. Spot Prawns and Qualicum Bay Scallops, Sweet Corn Applewood Bacon Risotto
Milk Chocolate Slice, Earl Grey Ice Cream
One of the city’s first supporters of the Vancouver Aquarium’s Ocean Wise program, Executive Chef Dore’s menus continue to focus on offering only sustainable seafood choices. From starters to mains, dishes are tasty and truly representative of the West Coast.
For the special occasion of Earth Hour, Herons West Coast Bar will offer signature cocktails like the Green Eco-tini and Roof Top Honey Caiprioska that feature concoctions infused with herbs plucked from the kitchen’s rooftop garden. Bartender, Frank Palter’s drink list reads like a local’s handbook of seasonal libations to sip and savour rain or shine. Be one of the first to sample new creations that will become signature Vancouver cocktails.
Guests checking in for the nights of March 25th to 27th are entitled to a few extra Earth Hour perks at The Fairmont Waterfront. With rates starting at $169, guests are offered 20 percent off all room rates and food & beverage with owners of hybrid vehicles receiving complimentary overnight valet parking and late check-out. As part of the year-long promotions celebrating The Fairmont Waterfront’s 20th Anniversary in 2011, the hotel will make a one-time $20 donation in the guest’s name to the World Wildlife Fund for this package stay. For reservations or more information regarding the Earth Hour special offer, please call 604-691-1991, 1-866-540-4509 or visit fairmont.com/waterfront.
When the clock strikes 9:30 pm, be in the room and have a chance to win a stay at the city’s Five Green Key Global rated hotel. The hotel’s 20th birthday cake created by Pastry Chef Naomi Robson will roll out with candles galore and one lucky individual will have the opportunity to experience The Fairmont Waterfront for a luxurious Fairmont Gold night’s stay.
